Graham rolls

INGREDIENTS

  • 250 g - type 1500 graham wheat flour

  • 250 g - type 500 wheat flour

  • sugar - 10 g (1/2 tbs)

  • fresh yeast - 20 g

  • salt - 10 g (1/2 tbs)

  • water – 290 ml

  • oil - 1 tbs

 

PREPARING THE DOUGH (mixer):

Pour all the ingredients into the mixer bowl and add lukewarm water, then mix it into a smooth, even mass (around 8 minutes). Place the dough in a bowl, cover and set aside for 20 minutes in a warm place. Then divide the dough into 8 pieces of around 100g each, shape into round or long rolls and place them on a baking tray greased with oil or lined with baking paper (the rolls can be scored with a knife). Cover and leave in a warm place for around 40 minutes. Sprinkle the rolls with water before baking them at 230 degrees Celsius for around 18 minutes.
