Homemade wholemeal bread

INGREDIENTS

  • 200 ml - homemade sourdough 

  • type 2000 wholemeal flour - 425 g

  • type 750 wheat flour - 250 g

  • yeast - 15 g

  • salt - 10 g (1/2 tbs)

  • sugar - 10 g (1/2 tbs)

  • water - about 465 ml (warm water 35–37 degrees Celsius)

 

PREPARING THE DOUGH (mixer):

Pour all the ingredients into the mixer bowl and add water, then mix it into an even mass (around 9 minutes on a low rpm). Place the dough in a bowl and cover it for about 25 minutes, then divide it into 2 equal pieces (about 680 grams). Shape the pieces, place in biscuit moulds and sprinkle with rye flour. Leave the moulds with the dough in a warm place for 40–50 minutes. Bake in the oven at 230C for about 40 minutes. Remove the loaves from the oven and leave them to cool down.
